Cauliflower Bhaji

THE versatility  OF CAULIFLOWER BHAJI MAKES IT A perfect addition TO ANY MEAL! THE CRISPY EXTERIOR  OF THE FLORETS GIVES WAY TO A SOFT, VELVETY INTERIOR, CREATING A textural contrast THAT IS TRULY DIVINE.

Serves: 4 - 6 people


Cook Time: 30 minutes

   

INGREDIENTS:

  • 1 medium cauliflower (cut florets to bite sized pieces, do not use the core)

  • 2 tablespoons of oil (Vegetable or Extra Virgin Olive oil, your choice!)

  • 1 medium chopped onion

  • 2 - 3 sliced green Thai chilis (keep the chilis whole if your spice tolerance is low, let the spicy lovers pop the chilis on their plate!)

  • 1 teaspoon of turmeric powder

  • 1 teaspoon of chili powder 

  • 1 teaspoon of garlic powder 

  • 1 teaspoon of salt (adjust per your taste)

  • 1 medium chopped tomato 

  • 2 tablespoons of cilantro (finely chopped to garnish)

  • 1⁄4 teaspoon of ground cumin

 

INSTRUCTIONS:

⋄ Step 1:

Using a large pan, add 2 tablespoons of oil , 1 medium chopped onion over medium heat, and cook for about 3 minutes (or till onions become translucent).

⋄ Step 2:

Add 2 - 3 sliced green Thai chilis, 1 teaspoon of turmeric powder, 1 teaspoon of chili powder, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1 medium chopped tomato; cook for 1 minute lightly stirring mixture.

⋄ Step 3:

Add the cauliflower while lightly stirring, cover and cook the cauliflower mixture for approximately 20 minutes (or till the cauliflower softens).

Add cilantro and the ground cumin,lightly mix for a minute.

Serve with Rice or wrap with Ruti.
